A brief stint at Clinique La Prairie in Clarens enriched his approach, enabling him to incorporate more of the health and well-being dimension into his creations, without compromising the originality of the flavours.

Luis Antonio has been working at the Hôtel Royal, a seasonal establishment, for 12 years now. Whenever it is closed, he takes advantage of this time to attend training courses in Italy, alongside Michelin-starred chefs and master pastry chefs, to keep abreast of the latest trends and innovations in contemporary cuisine.

Today, his career path has evolved: he is now Executive Chef. This role not only allows him to work in the kitchen, but also to be in direct contact with customers.

It’s a human dimension that spurs him on every day to perfect his skills, innovate and deliver an ever-improving experience.

His passion? It remains intact: cooking and the art of entertaining, with a strong taste for experimentation, always with respect for tradition.
